I made this Lemon Cream Pie for Easter last weekend, and it would suit any Greek Easter celebration this week, and basically any spring or summer gathering to come. With just a spoonful (well, two) of sugar, and a tasty gingersnap crust, this pie is the perfect balance of sweet and tart.

What would I change? Next time I’d make my crust a little thicker, and I’d also probably bake it for a little less time. The crust is still soft when it comes out of the oven, but hardens over time, and it was a little bit difficult to cut the first and second day we ate the pie and its leftovers. The third day the crust had softened because of the pie filling sitting in the fridge, and was much easier to cut and eat.  But, either way, it was a big hit at the dessert table, and was my first major deviance from baking a chocolate dessert in a long time!

Recipe (adapted from Real Simple, April 2012):

• 9 ounces gingersnaps (about 35) (I would do a little more next time and maybe do 1.5 times each of the other ingredients for the crust because the crust shrunk up to almost nothing)
• 6 tablespoons unsalted butter, melted
• 2 tablespoons granulated sugar
• 1 teaspoon kosher salt (I used regular iodized, it was fine)
• 2 large eggs
• 1 14-ounce can sweetened condensed milk
• 1 tablespoon finely grated lemon zest, plus more for serving, plus 1/2 cup lemon juice (I squeezed my own lemons for this, and then zested the fresh lemons, which I think makes a huge difference in the taste)
• 1 cup heavy cream
• 2 tablespoons confectioners’ sugar

Directions

1. Preheat oven to 350° F. In a food processor, process the gingersnaps until fine crumbs form. Add the butter, granulated sugar, and ½ teaspoon of the salt and pulse until moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Spread the crust to the very edges of the pie plate, as it will shrink when it bakes. Place pie plate on a rimmed baking sheet and bake until the edges are dry and set, 16 to 18 minutes. (Note: The bottom will still appear moist and soft but will become firmer as it cools; this is a crunchy cookie crust, not a soft, graham cracker-style one.) Let cool.
2. In a medium bowl, whisk together the eggs, condensed milk, lemon zest and juice, and the remaining ½ teaspoon of salt. Pour the mixture into the crust and bake until set in the center, 18 to 20 minutes. Let cool and then refrigerate until firm, at least 2 hours. (I served mine the next day, so I let the pie refrigerate overnight and skipped step 3 until I was about to take it to the party.)
3. With an electric mixer, whip the cream and confectioners’ sugar on medium until peaks form, 2 to 3 minutes. Spread on the pie, sprinkle with the additional zest, and serve immediately.

Okay, what else have I been up to? School–trying to finally graduate this year (my 5th, and longest year of undergrad) and I’m hopelessly trying to find a new apartment, which has been basically draining all of my energy–finding an apartment in  NYC is no easy feat. I know exactly what I want, I found it, and I wasn’t able to close on it, so now I’m forced to look for something else I love just as much, but I’m comparing everything else to the one I loved, of course.

Soooooooooooo….. A few months ago, one of my lovely readers, Michelle, emailed me with a major fashion dilemma–she has a wedding to attend in Maui this month with an invite labeled “cocktail attire”, but was clueless as to what she should wear! Lucky for her, I have a little bit of expertise in wedding guest attire, since basically every person I know is getting married right now.

Beach weddings are definitely confusing–there’s the whole element of “the beach” which is casual, laid-back, and easy-going, and then there’s the element of the “wedding” which usually tends to be a more formal event. So how do you merge the two? I pulled together a few looks that are appropriate for both the beach, as well as the reception, that are stylish, comfortable and appropriate for the occasion.

The result: You can go short or long, beaded or not beaded, sleeved or sleeveless, printed or not printed, color-blocked or all one color, easy fabrics like jersey or (gasp!) cotton can work…but the one element that pulls the look together? The flat sandal. Not only will your feet be thanking you after you’ve done the “Locomotion” and danced the rest of the night away, but it also just nails “the beach” look, without making the outfit too casual (say, if you wore…flip flops, like you might to go actually hang out at the beach).

The best part about all of these dresses and sandals, is that they’re all super-wearable! After the wedding, the dresses can wore dressed down for day or up for the office or to go out to dinner, and the sandals can all be wardrobe staples to replace those wretched Old Navy flip flops you’ve been collecting for $2.50/a pair each year.

While I kind of missed the boat on the previous big-name designer collaboration (Missoni for Target) I full intend on dishing out every dime in my wallet for every piece of Wu’s collection for Target, especially because not a single piece exceeds $49.99. Yep, you read that right: not a single piece of Jason Wu’s 53-piece collection for Target costs more than $50…hello, affordable fashion!

And while there are certainly a few pieces I’m not crazy about (uhhh, the blue flower wallpaper print scarf/bags and the cats with the bows around their necks on a scarf) I’m basically lusting after every sheer blouse, striped a-line dress and any hint of ruffles that I see.

I can’t believe I just admitted that.

Anyway, since my pickings for February 14th are looking slim once again this year (although, there is one guy I have in mind who j’aimerais spend it with…sh!t–now every guy I know reading this that thinks I might maybe sort of-kind of like them a bit is thinking this is about them now and the Carly Simon song “You’re So Vain” has popped into my head…and if the person I have in mind is reading this, he probably doesn’t think it’s about him…isn’t it ironic? Don’t you think? Ugh. Now Alanis Morisette!) I’ve decided that I’m going to celebrate this commercialized day that I formerly used to call “Valendoom’s Day” with the friends and family I love, and stop worrying about my perfect date that’s never going to happen unless the guy I have in mind is, in fact, reading this and decides to act upon it, in which case: I’ll take that last sentence back…but I highly doubt it.

I framed my 2012 resolutions!

I purchased a pretty frame to match my bedroom at Homegoods for $6.99 (this one is by Valerie Bertinelli), drew up my resolutions in Word and printed them on 4×6 photo paper to put into the frame. And not only did I frame them, but I put them on the bureau across from my bed, so that I’ll be reminded of my resolutions every day when I wake up.

My 2012 Resolutions are simple:

1. Learn how to play guitar – I’ve owned a guitar since 7th grade and learned to play a little in middle school, but not enough to count for anything…now I have to relearn everything again, but learning to play will taking my performing ability to the next level.

2. Start taking tap dance lessons – And while we’re talking about taking performing to the next level, my tap skills–or lack thereof–may be holding me back from my Broadway aspirations. Learning tap will give me the ability to audition for 75 % of the shows I can’t currently audition for. 

3. Resume ballroom dance lessons – I took ballroom lessons for a year and a half during my freshman and sophomore years of college. I loved it, but the cost of classes was putting a dent in my wallet. I’d like to start going to group lessons or find a partner to dance with to offset the cost. Ballroom was the dance I enjoyed taking the most and was the best at! (I’d also love to become a certified teacher, but maybe we’ll save that resolution for next year!)

4. Resume voice lessons – I took voice lessons for over 8 years through middle school and high school to help develop my voice. With all the auditioning I’ve been doing, I’m running out of songs that are relevant for me to audition with, and I need some structure to help keep my voice in shape.

5. Acquire a legit agent to represent me - A “legit” agent is a talent agent who represents talent for live theatre, television and film. Finding one would make my life a lot easier and would probably lead to me booking more jobs.

6. Cut Starbucks habit to 2-3 days a week - Not only am I addicted to Starbucks “coffee beverages” that are full of calories and other crap (even though I take most sugar-free and skim), but drinking coffee at Sbux is costly in NYC, and apparently they’re raising prices 1% in the next few weeks. Cutting my habit from 7 days a week, and sometimes 2 times a day, to 2-3 times a week will save me over $1000 a year…and countless calories.

7. Exercise more - In high school, I played a sport every season and stayed in better shape than I’m in now; not having a “team” to practice with hasn’t done me any favors over the last 5 years. I resolve to make a team of one (and maybe grab some friends) to start jogging, hit those dance classes, and use the many workout tapes I own. 

8. Eat healthier (less take out!) – Because I’m a pescatarian (I eat fish, vegetables, and animal by-products, but no actual meat) you might assume I’m “super-healthy”, but my restricting diet has become more of an inconvenience than something beneficial to me. I have no time to cook and have resorted to quick breakfasts (bagels and cream cheese, fried egg and cheese..etc) and frozen dinners (pizza and mac ‘n cheese) and way too much takeout…which equals lots of carbs. I resolve to start cooking, stop getting so much take out (and save money!) and seriously stop with the frozen pizzas.

9. Write more (blog and book) - In 2011, I pledged to write every day and broke my resolution after 3 weeks because I felt like I was creating content just to post it, and not because I had anything to say. This year I want to write every time I have something great to share–even if it’s a short post. I’ve also been working on a book for the past 2 1/2 years, that I’ve started, and restarted, thrown away, stopped writing, and restarted again 15 times. This year, I resolve to write the book…and finish it.

10. Stay positive, even when times are tough - Like I said in my Happy New Year post: 2011 wasn’t exactly the best year I’ve had. With social media to rant to 24/7, I had an outlet that let me pour my negativity into the world all the time and people at my beck-and-call to rant with me. This year, even when things get tough, I’m going to try to find a positive angle in every situation…and I’ve even started vlogging, turning my negative thoughts into humor…which is helping me to work on my comedic chops! And instead of the sparkling clean language that you normally get here…other than the title of this blog…you get to see a whole other side of my personality…the side a lot of my friends know.

11. Stop caring what other people think - I’m constantly worried about what people think about what I’m doing, how I look and how I’m acting. In 2012, I want to stop worrying about being an incessant people-pleaser. My friends don’t think I should date that guy because he’s a jerk? I’m going to go out with him, at least once and decide for myself.  Everyone wants my hair darker? Well, I like my hair blonde, so it’s staying blonde. …etc.

12. Take a vacation - Last year I never took a single vacation…not even a weekend at the beach. Even though my actual “employment” was a little spotty because I changed jobs and then stopped working for the off-Broadway show I was in: I’m pretty sure I never had a day off in all of 2011. I haven’t been anywhere since I traveled to Paris and Madrid in March 2010, and this year I want to go somewhere else in the world I haven’t been yet…I’ve only hit about 15 spots on my list of hundreds, so I think the possibilities are pretty endless…and if nothing else…I’m taking three days at the beach with my iPhone off: non-negotiable.
